Food Storage Friday: Types of Grains to Store

There are a huge variety of different grains that you can have in your food storage. Some types I've heard of , but don't really know what they are. Other types I can't even pronounce and sound like something straight out of a science fiction novel! I'm a huge fan of storing what you eat, so I'll cover the more commonly known and easily obtainable varieties. This is just a brief overview of grains. In the coming weeks, I'll go over several of the main types in greater detail.

It's suggested that you store many types of whole grains in your storage, for the additional nutritional value. However, some types of whole grains, like brown rice, go rancid rather quickly. I think it's important to store a wide variety of grains, including whole grains.

Rice
Short grain and long grain are most common types. Brown rice is incredibly healthy, but don't plan on storing large amounts as it goes bad very quickly and should only be stored for as long as a year. Rice is widely consumed and can be used is a variety of dishes, so it's a very useful addition to food storage. Both unopened and opened containers of rice will last a very long time- up to 30 years! Just be sure to store it in an airtight container!

Pasta
Pasta is sold in all sorts of fun shapes and sizes. Storing a variety of types will instantly add variety to your meals. Larger pastas like penne or large shells are best suited for heartier dishes with maybe a meat sauce. Smaller, thinner pastas like angel hair are perfect for light sauces, or can even be tossed with oil, salt and seasonings. Unopened pastas will be good for 8-10 years. Once opened, plan on using them within 18 months to 2 years.

Oats
The most common types of oats in food storage are Rolled, or "Old Fashioned" and "Quick Cooking". Rolled oats are more nutritious, but the quick cooking variety is handy! Oats can be made into bread, cookies and used in breakfasts foods. You can also substitute oats for meat in some main dishes. When stored in ideal conditions, oats will last for 8-10 years. Once opened, plan on using it within a year.

Instant rolled oats in the little packets are a great addition to your 72-hour kit, but shouldn't be part of your long-term storage plan as they don't keep very well.

Corn
Different types of corn can be used to grind into corn meal to make grits, hominy and polenta. Yellow dent corn is the most widely available and it the suggested type to store for ease of use. You can purchase corn meal, but keep in mind it has a shelf life of only 5 years. Corn meal is a wonderful thickening agent in many soups and stews and can also be used in muffins, cakes and as a breading.

Popcorn is a great addition to your storage as it makes for an easy, inexpensive treat! Popcorn stores best when kept very dry, but pops better when it's slightly moist. Prior to popping, sprinkle a few drops of water and shake it around to help moisten it slightly.

Quinoa
Quinoa is a relatively new grain that is becoming available in most stores. I've found it at Costco! It's incredibly healthy and is a great grain alternative to wheat. You cook it on the stove and serve it like you would rice. It's also wonderful in salads.

When quinoa is cooked, the germ of the grain coils into a small "tail" that adds to the unique texture. Note that it should be thoroughly washed before cooking in order to prevent it from tasting bitter.

Wheat
Wheat comes in different varieties and each variety is more or less suitable for a given purpose, whether that be for grinding into flour and making yeast breads, quick breads, cookies, etc. The most common wheat varieties are spring or winter, hard or soft, red or white. Hard wheats have a higher gluten content, which helps the food item you make to be less dense. Hard red wheat yields higher rising, lighter bread, whereas a soft wheat would be better for a quick bread or pastas, that don't have to rise as much.

Unopened, properly stored wheat will keep for 12-15 years. Once opened, plan on using it within about 3 years. If you grind wheat, plan on using it within a week as it loses nutritional value very quickly.

My Smith's Trip: 86% Savings!

I finally made it over to Smith's and was so surprised to find very well stocked shelves! Yay! I am super lucky and actually have 2 stores within a few miles of my house, so I went to both and was able to get a few more items on my list at the second store.

Before sales and coupons, I would have paid $66.60 for all 39 items.
However, I only paid $9.16,
which represents an 86% savings
and averages out to only .23 per item!

I did pay with a $5 catalina I got from the Kraft offer, but I also received back a $2 catalina from the Dan-o-nino yogurts. Overall, I was very pleased with what I came home with and even more pleased that I didn't go over my budget this month! Here is one of my two receipts from tonight. Fun!

Target stores all over Utah have marked down their toys to 75% off! Clearance items are located all over in the toy section. Be sure to look throughout the aisles and on the end caps. Most of the clearanced toys are for kids ages 5 and younger, but you never know what you might find, so go check it out!

Smith's Double Coupons: Readers' Results...Wow!

As most of you know, the Smith's Double Coupon event began this morning!  I've heard many different viewpoints on how it's gone thus far, which is what prompted me to post the poll to the right. Some equated it to Black Friday and wish they'd worn their kid's football helmet. People were lined up outside of stores waiting to charge. for the doors to open. Others said everyone was friendly, courteous and they had a great time! Interesting feedback from you all! I can't wait to hear how the next 3 days go.

I haven't been able to go, since I'm desperately trying to get my family of 5 ready for a trip north. {I'm exhausted already and the trip hasn't begun!} I've received several emails from readers sharing the details of their trips though, so I wanted to show you all how they did!

All About Catalinas and what if they don't print?

In the couponing world, the term "catalina" isn't referring to the salad dressing or the island, but instead a certain type of coupons that print at the register when you check out.

Catalina Marketing is an advertising company that has paired up with grocery retailers to bring consumers a variety of coupons and promos. The little machine sits by the register and prints out coupons and news about upcoming promotions. Many times catalinas are triggered by items you purchase. Other times, more general catalinas print out, letting you know about upcoming offers or passing along a discount to a local retailer.


In my opinion, the best type of catalinas are the ones that give you a certain amount off your next shopping trip. These specific catalinas look like the one pictured above and are, in essence, a gift card to use in the future! They have very few limitations, other than the expiration date. I've used several catalinas in one transaction and I've purchased a wide variety of items using them- a gallon of milk, diapers, fresh produce, etc.

A great strategy is to use a catalina to pay for items that will generate another catalina. Most catalinas roll at grocery stores, meaning you can use the same catalina to pay for items to trigger the exact same catalina again.

Catalina coupons can only be used at the store you got them from, even though they say "Manufacturers Coupon" at the top. Also, stores have the ability to participate in some catalina offers but not others. Even different locations of the same chain of stores can elect to participate or not! The only way to tell if your store is participating in a certain catalina offer is to test it out. {If it doesn't work, feel free to return the items.}

 
Unless you receive a catalina informing you of an upcoming promo, the only way to know of them is through word of mouth. I’m always on the hunt for new catalinas, so if you hear of one, email me and I’ll post it!

 
Occasionally, catalina offers malfunction and even if you purchased the correct items, it just doesn't print. Is that anything you can do? Certainly!
 
In my experience, the store is not helpful in regards to correcting the situation of catalinas not printing. It's not uncommon for store employees to not even be aware of catalina offers in effect! Remember, the machine is actually operated by a separate company, Catalina Marketing. I suggesting working with them to resolve the issue. Here are two ways to approach it:
  1. Call Catalina Marketing (877) 210-1917, option 1. The entire process normally takes about 5 minutes and every Customer Service Representative I've spoken with has been friendly and helpful.
  2. Email Catalina Marketing at coupon@catalinamarketing.com. Requests will be resolved within 2-3 days.
In both instances, they will need several pieces of information that can all be found on your receipt. They will need:
  • The store name and address where you shopped.
  • The date and time you checked out.
  • The number printed on your receipt after the time stamp.
  • The items you purchased and what catalina you were expecting.
  • Your name and address.
Once they have verified that you should have received the catalina, they will simply mail out your catalina coupon!

Simple Homemade Bruschetta

This time of year it seems the garden is bursting with home-grown tomatoes and I couldn't be more thrilled. My husband jokes that each year I add another tomato plant to the mix and it's true! Fresh tomatoes from the garden taste so different than store bought tomatoes!

This is one of those non-recipes that I don't measure anything for and it comes out a bit different each time. Anyway you make it though, it's absolutely delicious. It's a sure crowd pleaser with minimal effort required on your part, too! My larger tomatoes are still green, so I used grape tomatoes this time around. I'm a big fan of using what you have on hand and adjusting the recipe to please your family.

Simple Homemade Bruschetta

1/2 cup diced fresh tomatoes
2 TBSP fresh basil, torn into pieces
1 TBSP Balsamic vinegar
1/2 tsp minced garlic
2 TBSP grated Parmesan cheese
a couple dashes of coarse salt
fresh mozzarella pearls {optional, but worth the added cost if it's in the budget!}
about 1/4 cup olive oil
6 slices of french bread

Combine the tomatoes, basil, balsamic vinegar, garlic, Parmesan cheese and salt. Many recipes state to allow the flavors to meld in the fridge for a few hours. This is ideal of course, but I even if it sits for 20 minutes prior to serving, it tastes wonderful.

Preheat the oven to broil.

While the tomato mixture is chilling, slice the bread, arrange on a baking sheet and drizzle olive oil on top. I pour my oil in a small bowl and brush it on to get a more even coating. Once the oven is adequately heated, put the bread in and keep a close eye! It only takes a few minutes to toast the bread a nice golden brown.

Take the bread out and let it cool for a couple minutes. Arrange the mozzarella pearls on each slice. Depending on how big your slices are, you'll use 1-4 pearls each.

Stir the tomato mixture and spoon about 1-2 TBSP on each slice of bread. Serve immediately.
