It's not really a recipe per se, but it truly is my favorite way
to eat tomatoes fresh from the garden!
Not sure about anyone else, but I have way more
tomatoes than zucchini this year! Shocker, huh?!
At any rate, here it is. Simple and delicious!
Start with some fresh tomatoes. Slice 'em up.
Toast some bread.
A toaster oven would be fantastic.
Too bad I don't have one.
A regular oven works just fine.
After it's a little toasted, arrange the tomatoes on top.
Add a little sprinkle of Kosher salt, and some basil would be nice.
{Fresh basil would be heavenly!}
Sprinkle some cheese on top.
I used mozzarella and Parmesan.
Heat & serve! Enjoy!

That does look and sound heavenly! I had never thought of adding cheese on top. I do something similar...toast, mayo, tomatoes, salt and pepper. My favorite summertime open-faced sandwich!!
I didn't grow tomatoes this year, but will have to get some at the store for this little splurge! Thanks for the reminder.

That looks good! I have fresh tomatoes AND basil in the garden, and mozzarella (well, that's in the fridge:) ). I just need to make some more french bread . . .
