Something I do to cut down on prep time is to use a roast for the beef. I buy a 3-lb roast and cut it all up into thin slices and divide the meat into 3 different meals. I wrap them in Press & Seal Freezer wrap, then in foil and freeze. I pull it out that morning for dinner that night and don't have to cut any meat!
Easy Broccoli Beef
1 lb beef, cut into thin slices
6 cups cut broccoli
Gravy:
- 2 ½ c. water
- 3 TBSP cornstarch
- 1/3 cup soy sauce
- 2 TBSP cornstarch
- 2 TBSP soy sauce
- 2 tsp sugar
- 2 tsp ginger
- 2 cloves garlic
Heat about a TBSP of oil in pan. Stir fry meat 1 minute. Add broccoli and cook 3-4 minutes. Add gravy mixture and slowly bring to a boil. Mixture will thicken as you cook it for another 4-5 minutes. Serve over hot rice and enjoy!

This may be a dumb question but what kind of roast works the best?
Anon- I used minced ginger from the jar when I took the pic. I have used ground ginger though and it tastes just fine!
Also, as to what type of roast- whatever is cheapest! LOL! The roast I used here was chuck roast I believe- it was a Smith's markdown.

So I am making this dish right now, but when I made the marinade it didn't really seem like very much. It coated the beef, but there wasn't really much to marinate it in. Your picture looks like it's more liquid than mine. Did you add water?
Jenn- nope, I didn't add any water. The dish I marinated it in is actually pretty small. It works out though- I promise! You add water when you make the gravy, so there ends up being more sauce. Hope that makes sense!
And LOL that my husband commented. Maybe I should make this tonight?!

My question is, what price are you paying for broccoli?
Right now, Smith's (here in Vegas)has broccoli on sale for $1 a pound. That is the lowest I've ever seen it, and it's usually on sale for $2 a pound. That would be $3-$6 just for the broccoli in this dish. My limit per meal for our family of 7 is $5.
Perhaps you are getting it for much lower?
I love broccoli, but it is very expensive here.
I just looked at your Winco review and noticed the broccoli price you have. .74 a pound is much lower than what I have seen here. I guess that answers my question!
I had a big stash of frozen pork sirloin chops I got for 99cents lb.so I used that instead. I was so good! My husband approved and I will be making this again. I finally found a good use for the soy sauce I got cheap at Wal Mart a few months ago!
