If you've never tried Panko before- try it! They're Japanese breadcrumbs and you can find them just about anywhere these days. I bought mine in the Winco bulk food section. They make foods super light and crunchy. I prefer them with zucchini instead of regular bread crumbs so that they don't detract from the flavor of the zucchini.
Oven Fried Zucchini
1 medium- large sized zucchini
1 egg
1/2 cup Panko
onion powder, salt, pepper and any other spice you'd like
Thinly slice zucchini. Beat egg in a separate bowl. Combine Panko with seasonings in another bowl. Dip individual pieces of zucchini in egg, then Panko mixture. Arrange on a pan covered in parchment paper, to prevent sticking.
Bake in a 425 degree oven for 12 minutes. Turn on broiler and bake until tops turn light brown, about 3-4 minutes.
Serve immediately with a side of ranch dressing. Enjoy!

Maybe you know this one already but this is one of our favorites too.
Med-Lrg Zucchini cut in slices.
Brush on both sides (or dip in) Extra Virgin Olive Oil.
Sprinkle taco seasoning on top and BBQ. Turn once and sprinkle taco seasoning. BBQ until soft. Yummmmm.
