The Best Classic Brownies

I know what you all need to brighten up your Friday afternoon- rich, delicious BROWNIES. Am I right or what? Is it just me?!

For whatever reason I've been in a funk this week. I can't seem to shake that blah feeling. I'm craving a nap outside in the sunshine and what do I get? No nap, whiny kids and snow forecasted for Monday. Figures.

I have big plans to crank up some fun music and make something tasty in the kitchen. That always seems to make me feel better. Bonus points for my husband coming home and cleaning the kitchen after I'm done. {hint, hint!}

I got this recipe from Laura of Real Mom Kitchen. Her cookbook is full of easy recipes for favorites and this recipe for brownies fits the bill perfectly. They're rich, dense, chocolaty and easy to throw together. I also like them because they're pretty. It seems like brownies-from-a-box never come out of the pan well and look like a giant mess. These taste delicious and look great too, what more could you ask for?! Oh right, a nap. And 80-degree weather...

The Best Classic Brownies

Note: The original recipe calls for twice the amounts below to be made in a large, 12x17 jelly roll pan. I halved it and make it in a 9x13.

Brownies:
  • 4 eggs
  • 2 cups sugar
  • 1 tsp salt
  • 2 tsp vanilla
  • 1 cup melted butter
  • 1 1/2 cups flour
  • 3/4 cup cocoa
Frosting:
  • 2 cups powdered sugar
  • 1/4 cup butter, softened
  • 1/4 cup cocoa
  • 2-4 TBSP milk
Preheat oven to 350 degrees. Beat eggs until well blended. Add sugar, salt, vanilla and butter. Combine. Mix in flour and cocoa. Spread in greased pan. Bake for about 20-25 minutes, until brownies are set.

Allow brownies to cool before frosting. To make pretty brownies, stick them in the freezer after cooling. Frost, then place them back in the freezer for about 30 minutes. Slice with a thin, sharp knife.

Thanks for a wonderful looking recipe! I am right there with you with the blah mood. I think it has something to do with the let down after the holidays, it's January (no gardening for me yet!) and I find myself aimlessly wandering around the house wondering what to do. Of course being tired from being up with my 6 month old at night doesn't help the situation at all! Maybe you're right...I should go start to cook!

Thanks for the recipe! I've been checking back to see what you'd be making next. These look yummy! I agree about the blah feeling. Take a drive up to one of the resorts this weekend to get out of the valley, it will help chase the blah away!

Made these brownies (followed directions exactly) and WOW!!! Seriously so delicious and so pretty! Thank you for the directions on how to cut them so they look so perfect. :)

Made these and forgot to melt the butter, it was a more cake Luke brownie, not sure if that's why. I like mine more fudgey ill make them again and melt the butter and see what happens.
