Raspberry Jell-O Pretzel Squares

Happy Jell-O week everyone! What? You didn't know it was Jell-O week? You didn't have it hilighted on your calendar years in advance? Don't worry, there's no time like the present to begin celebrating!

Green Jell-O is the official state snack of Utah, so this week, open your cupboards and whip up a box of gelatinous goodness. There are oodles and oodles of Jell-O recipes out there, here is one I liked. I made mine with Raspberry Jell-O because green Jell-O freaks me out.  No joke. I made the family recipe once and documented the maddness. The carrots put me over the edge. To each her own though, use whatever flavor you'd like!

Raspberry Jell-O Pretzel Squares

2 cups finely crushed pretzels
1/2 cup (1 stick) butter, melted
1/4 cup sugar {I omitted this}
2 cups water, divided
2 pkg. (3 oz) JELL-O Lime Flavor Gelatin
1 can (14 oz.) sweetened condensed milk
1 cup sour cream
1 cup thawed whipped topping

PREHEAT oven to 350ºF. Mix pretzels, butter and sugar. Press pretzel mixture onto bottom of 13x9-inch baking dish. Bake 10 min. Cool.

BRING 1 cup of the water to boil. Pour over dry gelatin mix; stir until dissolved. Add remaining 1 cup water; mix well. Meanwhile, place sweetened condensed milk and sour cream in blender; cover. Blend until smooth. Slowly pour in gelatin mixture; cover. Blend until well blended. Pour over crust.

REFRIGERATE 2 hours or until set. Cut into 16 squares. Top each serving with whipped topping.

LOL! Again, to each his own. I agree though, it's hard to make jell-o look pretty. I tried. It did taste good! ;)

my husband loves this stuff-thanks for the recipe as I don't have it!! It is actually really good from when I ate it last :)
